2021 Catie's Corner Viognier
The 2021 Catie's Corner Viognier was picked September 3rd, 2021. It was whole cluster pressed and allowed to settle for two days before being racked to barrel. The juice was then inoculated and barrel fermented. Used French Oak were used to ferment and age the wine. The wine has undergone no malo-lactic fermentation.
After 6 months of aging the barrels were racked to tank and blended for cold stabilization in preparation for bottling.
