The 2017 Malbec was harvested between September 25th and October 5th of 2017. It was gently destemmed and then pumped to tank. It was fermented on the skins for 10-14 days and then drained at the completion of alcoholic fermentation. After draining it was racked to 55% new French and Hungarian Oak for ageing. It was then racked quarterly for the first year before being racked to tank in May for bottling.
