Release notes: Displaying beautiful structure and balance, our 2000 Cabernet Sauvignon reveals alluring aromas of grenadine, crushed herbs, cocoa bean and smoky vanilla oak tones. The flavor profile delivers nuances of fresh cherry juice, chocolate mousse and spiced plum preserve with lingering espresso notes on the finish.

Notes from Retasting, March 1, 2007: In the glass, this wine's ruby-hued color is  fading to garnet-tones. The nose is still fresh, with mature notes of cassis, baked plum, rose, cassis, smoke, dry oak and a hint of eucalyptus. The mouthfeel is soft and smooth with nearly juicy red fruit notes, and traces of rosehip tea, light roast coffee and currant.

Notes from Retasting, February 13, 2008:
The 2000 Titus Cabernet Sauvignon strongly exhibits youth and vibrancy with a clear ruby to garnet rim. The nose is packed with dark fruit accompanied by notes of leather and coffee. The dark fruits on the pallet are dense, lush blueberry, boysenberry and cassis. The fruit is joined by evolved flavors of leather, herbs, spice and smooth integrated oak leading to an elegant finish with splashes of mocha and sweet caramels. This wine has enough finesse to age for a few more years but is absolutely a treat to drink now. We recommend decanting the 2000 Cabernet Sauvignon for an hour or so before drinking.

Vineyard Notes
Our family vineyard, located on the valley floor just north of St. Helena on the Silverado Trail, possesses well-drained, sandy, alluvial soils and is characterized by its ability to produce complex wines with well-defined fruit flavors, gentle acids and naturally balanced tannins. Further north, our Ehlers Lane Vineyard consists of a stony, dry stream bed and a knoll composed of thin gravelly soil over hard volcanic ash. Planted entirely to Cabernet Sauvignon these infertile soils produce low yields of grapes that display concentrated flavors.
Other Notes
The 2000 vintage began with a mild winter and average rainfall. Early summer heat in late May and June led to average temperatures in July and August, allowing for an extended, even ripening period. A heat wave in early September was followed by weeks of unseasonably cool weather, granting the grapes more "hang time" to gradually attain full ripeness and maturity.
