1993 Cabernet Sauvignon
This 100% Estate Grown wine is a blend of 92% Cabernet Sauvignon and 8% Petit Verdot. The 1993 vintage brought significant rainfall after six years of drought. Grapes were harvested in late September at 24 Brix from an older dry-farmed block of Cabernet Sauvignon and fermented in two separate lots. Following 22 months in French and American oak barrels, the wine was given a year of aging in bottle prior to release.
Retasted in March 2007, this wine is still showing surprising freshness and bright fruit character. Aromas are mature and complex with nuances of cassis, chocolate, mushroom, bay leaf and leather. On the palate, the wine is mellow and balanced with good acid. Smooth, well-integrated tannins support flavors of cherry, plums, baking spice, olives, smoke and crushed herbs.
