After the fruit was received at the winery, it was destemmed directly to a tank where it was fermented for 14 days. After fermentation, the free run wine was drained from the tank and racked to barrel. This wine was racked quarterly during the first year.
The aromas present here are bright and perfumed, with hints of cherry, red currant, Mexican chocolate and dried basil. That sweet and savory nose is followed up on the palate with a tasty combination of dried cranberries, pomegranate, plum sauce, cardamom, and vermouth. Elegance lingers on the palate, while tannins fill the mouth and drive the finish. Settle in with this wine as you enjoy salmon, roast chicken or leg of lamb. Enjoy through 2028.
